TOMATOES PROVINCIAL
Ingredients
2 large greenhouse tomatoes
1 tsp. olive oil
1 tsp. bread crumbs 1 tsp. grated parmesan cheese dash of garlic salt 1/2 tsp. dry oregano
1/2 tsp. basil, fresh if available
optional: 1/2 tsp. sesame seeds, or a pinch of ground red chile
Preparation
Slice tomatoes in half and place sliced side up in shallow baking pan. Sprinkle over the top of each tomato half olive oil, bread crumbs and remaining ingredients.
Place in hot oven or under preheated broiler until very hot and top browns a bit.
Note: These can be baked ahead of time, covered with plastic wrap and pulled out for broiling as the final step in dinner preparation.
Makes 4 servings.
