SWEET HERBED TOMATOES

Ingredients

6 medium greenhouse tomatoes, peeled
2 greenhouse English cucumbers, scored and thinly sliced
1/2 cup salad oil
1/4 cup dry white wine
1/4 cup white wine vinegar
2 tablespoons snipped chives
1 tablespoon snipped parsley
1 tablespoon sugar
1 tablespoon dried salad herbs, crushed
1 teaspoon salt
1/8 tablespoon ground pepper
1 large screw-top jar

Preparation

Lightly sprinkle tomatoes with salt. In a large, deep bowl, combine tomatoes and cucumbers. In jar, combine oil, wine, vinegar, chives, parsley, sugar and herbs; add 1 teaspoon salt and the pepper.  Seal jar and shake vigorously. Pour mixture over vegetables. Cover and chill several hours or overnight to blend the flavors. Turn tomatoes once or twice. Remove tomatoes, but reserve cucumbers in marinade. Wrap each tomato in 6-inch square of heavy-duty foil. Grill over medium coals about 20 minutes or heated through, turning once. Drain cucumbers and reserve marinade for leftovers. Serve tomatoes with cucumbers on top.
