PEPPER FAJITAS

Ingredients

1 each of greenhouse sweet red, yellow and orange bell pepper, cut into strips
1/4-cup white onion, julienne cut
1 chicken breast (or shrimp or beef), cut into medium thin strips
1 clove fresh garlic, crushed
1 tsp fresh ginger, chopped
2 tbsp canola oil
2 tsp white or black sesame seeds
1 tbsp soy sauce

Preparation

Prepare and line up all ingredients. Heat 1 tbsp canola oil in a large frying pan. Add the chicken and cook on high heat for about 30 seconds. Add garlic and sesame seeds, and cook for one minute. Add soy sauce and cook for one more minute. Pour the mixture into a bowl.

Wipe the frying pan and add 1 tbsp canola oil, heat to hot. Add onions and cook for one minute. Add peppers and cook, stir often until the onions and peppers just begin to soften (about two to three minutes). Add the meat back to the frying pan and cook for 30 seconds. Serve at once with soft tortilla shells. Other accompaniments may include shredded cheddar cheese, sour cream, guacamole and tomato salsa.
