CUCUMBER-TOMATO SALAD

Ingredients

1 greenhouse English cucumber cut into 1/2” slices (2 cups)
3 tablespoons red wine vinegar
1 tablespoon of sugar or sugar substitute
1/2 teaspoon salt
2 greenhouse campari tomatoes, seeded and coarsely chopped (1 1/3 cups)
4 green onions, chopped (1/2 cup)
1/4 cup fresh mint, chopped
2 tablespoons extra-virgin olive oil
salt and freshly ground black pepper

Preparation

In a large bowl combine cucumber, vinegar, sugar and salt. Marinate for 30 minutes. Add tomatoes, green onions, mint and olive oil. Gently mix to combine ingredients. Season to taste with salt and pepper.

Makes 4 servings.
