BUTTERHEAD LETTUCE WITH BUTTER DRESSING

Ingredients

1/2 pound greenhouse Butterhead lettuce (about 4 heads), not chilled
1 garlic clove
1/2 stick (1/4 cup) unsalted butter
4 teaspoons fresh lemon juice

Preparation

Separate lettuce leaves, and place in bowl. Slice garlic clove in half, place in with butter in small heavy skillet over medium heat, stirring occasionally until garlic is golden, about 3 minutes. Remove skillet from heat and discard garlic. Add lemon juice and salt and pepper to taste. Swirl skillet to mix, letting butter foam.

Pour warm dressing over lettuce and toss to coat.

Serve immediately.
